📝 Ingredients

  • 2 slices wholemeal bread (about 35 g each)
  • 2 tsp mild mustard (about 10 g)
  • ½ apple (about 90 g)
  • 25 g grated Cheddar
  • 1 pinch dried thyme
  • 150 g Greek yoghurt (2% fat)
  • 1 tsp honey (about 7 g)
  • Black pepper

🍴 Utensils

  • Air fryer
  • Paring knife
  • Chopping board
  • Baking paper
  • Small bowl

📖 Steps

  1. Preheat the air fryer for 3 min at 180 °C. Meanwhile, wash the apple half, remove the core without peeling it and cut it into very thin 2 to 3 mm slices: the thinner they are, the better they soften in 5 min.
  2. Spread each slice of bread with a teaspoon of mild mustard, right to the edges, so the bread doesn't dry out at the sides during cooking and every bite is full of flavour.
  3. Arrange the apple slices like scales, slightly overlapping, covering the whole surface of the bread. Add the thyme and a twist of pepper, then spread the Cheddar in a thin, even layer, right to the edges.
  4. Place the toasts on a piece of baking paper in the bottom of the basket, without overlapping. Cook for 5 min at 180 °C, until the Cheddar is melted and bubbling, lightly golden at the edges, and the bread is crisp underneath.
  5. Just before the end of cooking, take the Greek yoghurt out of the fridge, spoon it into the small bowl and drizzle with the honey: well chilled, it makes a pleasant contrast with the hot toasts.
  6. Lift the toasts out using the baking paper and leave them to cool slightly for 1 min, so the cheese sets a little and no longer runs. Cut them in half and serve immediately with the yoghurt.
💡 FitBot tip: In autumn, swap the apple for a nice ripe pear. For a more savoury toast with even more protein, slip a slice of cooked ham under the apple slices.
