📝 Ingredients
- 2 slices country bread or baguette (not sandwich bread — too soft)
- 60 g brie or camembert, sliced
- 2 tsp acacia or wildflower honey
- 6–8 walnut halves (or pecans for extra indulgence)
- ½ tsp fresh thyme leaves
- A few arugula leaves (optional, for contrast)
- Freshly ground black pepper
- Fleur de sel

📖 Steps
- Preheat the oven broiler or toaster. If using the oven, set it to 220 °C on the broil setting.
- Toast the bread slices until golden brown on both sides. The inside should stay slightly soft and the outside crisp.
- Immediately lay the brie slices on the hot bread — the heat starts to soften the cheese slightly.
- Place under the broiler for 1–2 min to melt the brie (watch it: it happens very fast). The cheese should be oozing but not completely liquid.
- Take out of the oven and drizzle with honey right away. Scatter the roughly crushed walnuts over the top.
- Sprinkle with fresh thyme and a generous grind of pepper. Add a few arugula leaves if using.
- Finish with a pinch of fleur de sel to balance the sweetness. Serve within 2 minutes — the crunch doesn't last long!
