📝 Ingredients

  • 2 slices of wholemeal, rye or sourdough bread (the base makes all the difference)
  • ½ very ripe avocado
  • 40 g Norwegian smoked salmon (2 slices)
  • ½ lemon (juice + zest)
  • 1 tsp drained capers (optional but excellent)
  • ¼ tsp Espelette pepper or chili flakes
  • Fresh dill
  • Salt, pepper
  • Optional: 1 poached or soft-boiled egg to make it a complete meal

📖 Steps

  1. Toast the bread slices until golden. The bread should be crispy so it holds up to the moisture of the avocado without going soggy.
  2. Halve the avocado and remove the pit. Using a fork, mash the flesh directly onto the still-warm toast. Don't smooth it out completely — a slightly chunky texture is perfect.
  3. Season the avocado: lemon juice (prevents browning and adds freshness), salt, pepper and Espelette pepper.
  4. Arrange the smoked salmon slices, crumpling them slightly for volume — don't flatten them.
  5. Scatter the capers over, if using. Zest a little lemon directly on top.
  6. Sprinkle generously with fresh dill. Finish with an extra squeeze of lemon juice.
  7. If adding an egg: poach for 3 min in barely simmering water with a dash of vinegar, or soft-boil for 6 min, then cool in cold water and peel.
