📝 Ingredients
- 4 slices wholemeal bread (about 40 g each)
- 250 g plain skyr, 0% fat
- ½ tsp vanilla extract
- 2 apples (about 150 g each)
- 10 g unsalted butter
- 1 tbsp honey (1 tsp for the skyr, 2 tsp for the apples)
- ½ tsp ground cinnamon
- 20 g walnut halves
🍴 Utensils
- Non-stick frying pan
- Toaster
- Chopping board
- Knife
- Bowl
- Spatula
📖 Steps
- Wash the apples, quarter them and remove the core and pips. Cut each quarter into 3 slices about 1 cm thick. No need to peel them: the skin helps the slices hold their shape during cooking.
- In the bowl, mix the skyr, vanilla extract and 1 tsp honey until smooth and creamy. Keep it in the fridge while the apples cook, to preserve the hot–cold contrast.
- Roughly chop the walnuts with a knife. Toast them in the dry frying pan over a medium heat for 2 minutes, stirring, until they smell nutty, then tip them onto a plate.
- In the same pan, melt the butter over a medium heat. When it foams, add the apple slices in a single layer and cook for 3 minutes without stirring, until golden underneath.
- Turn the slices with the spatula, add the remaining 2 tsp honey and the cinnamon, then cook for another 3 to 4 minutes, stirring gently. The apples should be tender but still whole, coated in a golden syrup. Don't turn up the heat: honey burns quickly.
- Meanwhile, toast the slices of bread in the toaster until golden and really crisp: they need to stay firm under the topping without going soggy.
- Spread each slice generously with vanilla skyr, arrange the warm apples on top with their syrup and scatter over the toasted walnuts. Eat straight away, while the apples are still warm.
💡 FitBot tip: For even more protein, increase the skyr to 350 g: you gain about 5 g of protein per serving. The pan-fried apples keep for 2 days in the fridge and reheat in 1 minute in a frying pan.
