📝 Ingredients
- 120 g very fresh salmon (sashimi grade)
- ½ ripe avocado
- ½ mango or 4 cherry tomatoes
- 1 tbsp soy sauce
- 1 tsp sesame oil
- ½ lime (juice + zest)
- ½ tsp freshly grated ginger
- 1 spring onion, chopped
- Fresh coriander or chives
- Salt, pepper, chilli (optional)
- Crackers or rye toast to serve

📖 Steps
- Cut the salmon into small 5 mm dice with a very sharp knife. Never mince or crush it — the dice should be clean-cut.
- Season the salmon: soy sauce, sesame oil, lime juice, ginger, spring onion. Mix gently. Chill for 10 min.
- Dice the avocado to a similar size. Season with salt, pepper and a squeeze of lime.
- Cut the mango or cherry tomatoes into small dice.
- Taste the salmon tartare and adjust the seasoning — it should be bright and fragrant.
- Plate using a ring if you have one: avocado as the base, salmon on top, mango around it.
- Finish with lime zest, coriander and a drizzle of sesame oil. Serve immediately with crackers or toast.
