📝 Ingredients
- 120 g ground beef (15% fat)
- 4 small corn or flour tortillas
- ½ tsp cumin
- ½ tsp smoked paprika
- ¼ tsp chili powder
- ¼ tsp garlic powder
- ½ red onion, finely chopped
- 1 tomato, finely diced
- 1 tbsp lime juice
- ½ avocado, mashed
- 2 tbsp light crème fraîche
- Fresh cilantro, salt, oil
🍴 Utensils
- Frying pan
- Two small bowls
- Citrus juicer
📖 Steps
- Make the pico de gallo: mix the tomato, half the red onion, lime juice, chopped cilantro and salt. Let marinate for 10 min.
- Mash the avocado with a fork along with the rest of the lime and a pinch of salt. Keep it chunky.
- Brown the ground beef in a hot dry pan, breaking it up as it cooks. Season with salt. Once the liquid has evaporated, add the cumin, paprika, chili and garlic powder. Cook for another 2 min.
- Warm the tortillas directly over the gas flame (5 sec per side) or in a dry pan. They should have some charred spots — that's normal and delicious.
- Build the tacos: guacamole first, then the spiced beef, pico de gallo and crème fraîche.
- Sprinkle with fresh cilantro and raw red onion for crunch.
- Serve immediately with lime wedges.
💡 FitBot tip: Never fill the tacos ahead of time — they go soggy. Serve all the components separately and let everyone fill their own taco at the last moment to keep them crispy.
