📝 Ingredients

  • 320 g orzo
  • 400 g raw peeled prawns
  • 2 garlic cloves
  • 2 tbsp olive oil (1 for the prawns, 1 for the dressing)
  • 1 cucumber (about 300 g each)
  • 200 g frozen peas
  • 20 g fresh dill
  • 300 g Greek yoghurt 2 %
  • 1 lemon (zest and juice)
  • ½ red onion
  • Salt, black pepper

🍴 Utensils

  • Large saucepan
  • Fine sieve
  • Frying pan
  • Mixing bowl
  • Fine grater
  • Cutting board and knife

📖 Steps

  1. Bring a large pan of salted water to the boil. Cook the orzo for 1 minute less than the time on the packet (usually 8 to 9 minutes), stirring at the start so it doesn't stick. Add the frozen peas for the last 2 minutes.
  2. Drain in the fine sieve and rinse under cold water, stirring, until everything is cold. Leave to drain for 5 minutes, shaking from time to time: any remaining water would dilute the dressing and make the salad soggy.
  3. Pat the prawns dry with kitchen paper so they sear rather than boil. Peel and slice the garlic. Heat 1 tbsp oil in the frying pan over a high heat and fry the garlic for 30 seconds without letting it brown.
  4. Add the prawns in a single layer, in 2 batches if the pan is small, and cook for 1 min 30 to 2 minutes per side, until pink, opaque and curled into a C (an O means they're overcooked). Salt lightly and leave to cool on a plate.
  5. Halve the cucumber lengthways and scoop out the seeds with a teaspoon: they are what release water. Cut it into small dice. Thinly slice the half red onion and finely chop the dill.
  6. Make the dressing in the mixing bowl: combine the Greek yoghurt, the grated zest and juice of the lemon, 1 tbsp olive oil, half the dill, salt and pepper. It should be thick and well seasoned: taste and adjust the seasoning.
  7. Add the well-drained orzo and peas to the bowl and stir to coat every grain in the dressing. Add the cucumber, red onion, cooled prawns and the rest of the dill, then fold together gently.
  8. Divide between 4 airtight containers and keep in the fridge for 2 days at most, because of the prawns. Before eating, stir well so the dressing coats the orzo again.
💡 FitBot tip: For a vegetarian version, replace the prawns with 2 tins of chickpeas (530 g drained). You can also add 100 g crumbled feta for an even more indulgent salad.
