📝 Ingredients

  • 2 wholemeal wheat tortillas (40 g each)
  • 60 g cream cheese
  • 1 tbsp chopped fresh chives
  • 4 slices turkey breast (160 g)
  • 30 g baby spinach
  • 1 carrot
  • Black pepper

🍴 Utensils

  • Grater
  • Small bowl
  • Chopping board
  • Very sharp knife
  • Cling film

📖 Steps

  1. Peel the carrot and grate it finely. Then squeeze it in your hands over the sink to remove the excess juice: a carrot that's too wet would make the tortilla soggy and the roll wouldn't hold together.
  2. In the small bowl, mix the cream cheese with the chopped chives and a grind of pepper, mashing with a fork until smooth and easy to spread.
  3. Lay the tortillas flat on the board. Spread them with cream cheese right to the edges, taking particular care with the top strip: the cheese will act as glue to seal the roll.
  4. Lay 2 slightly overlapping slices of turkey on each tortilla, then a layer of baby spinach and the grated carrot, leaving the top 3 cm clear so the filling doesn't spill out when you roll it.
  5. Roll up each tortilla from the bottom, keeping it tight from the very first turn and tucking the filling in with your fingers as you go. Finish on the strip of cream cheese and press for a few seconds to seal.
  6. Wrap each roll tightly in cling film and leave it in the fridge for 5 minutes: it firms up and slices more cleanly. Remove the film and cut into 3 cm pieces with the sharp knife.
💡 FitBot tip: For even more protein, replace half the cream cheese with skyr. Wrapped tightly in their film, the rolls keep for 24 hours in the fridge: perfect for the lunch box.
