📝 Ingredients
- 5 tart apples (about 150 g each)
- 300 g frozen red berries
- 2 tbsp honey (about 40 g)
- ½ lemon (for the juice)
- ½ tsp ground cinnamon
- 3 tbsp water
- 1 tsp sunflower oil (for the baking paper)
🍴 Utensils
- Large saucepan with lid
- Stick blender
- Spatula
- 2 baking trays and baking paper
- Scissors
- Airtight container
📖 Steps
- Peel the apples, quarter them and remove the core and pips, then cut them into 2 cm cubes. Put them in a large saucepan with the still-frozen red berries, the juice of the half lemon and 3 tbsp water.
- Cover and cook for 15 min over a medium heat, stirring from time to time, until the apples crush easily under the spoon. Off the heat, add the honey and cinnamon, then blend with a stick blender until perfectly smooth.
- Return to a low heat, uncovered, and leave to thicken for 10 to 15 min, stirring often with the spatula, as the purée catches and splatters. It is ready when a line drawn with the spatula across the bottom of the pan takes a few seconds to close up.
- Preheat the oven to 80 °C, fan setting if possible. Line the 2 trays with baking paper and oil them very lightly with kitchen paper. Divide the purée between them and spread it with the spatula into an even 3 mm layer: edges that are too thin will crack, and a centre that is too thick will stay sticky.
- Put both trays in the oven and leave to dry for 4 h, wedging a wooden spoon in the oven door to let the moisture escape. Swap the trays halfway through drying so that they dry evenly.
- Check the drying: the surface should be smooth, slightly shiny and no longer sticky to the touch, even in the centre. If any area is still sticky, continue for another 30 min to 1 h. Then leave the trays to cool completely at room temperature, about 30 min.
- Cut each fruit sheet, paper and all, into 6 equal strips with scissors, then roll up each strip with the paper on the outside: it stops the rolls sticking together and peels off when it's time to eat.
- Store the 12 rolls in an airtight container at room temperature, where they will keep for a week. For a snack, slip a portion of 3 rolls into the bag: unlike fresh fruit, they don't mind being knocked about.
💡 FitBot tip: For little ones, replace the honey with 2 tbsp apple compote: the flavour will be a little tarter. You can also sprinkle the purée with sesame seeds before drying for some crunch.
