📝 Ingredients
- 120 g plain flour (+ a little for the work surface)
- 70 ml lukewarm water
- 2 tbsp sunflower oil (1 for the dough, 1 for cooking)
- 4 eggs
- 1 tomato (about 120 g)
- 80 g white cabbage
- ½ brown onion (about 60 g)
- Salt, black pepper
🍴 Utensils
- Mixing bowl
- Rolling pin
- Large non-stick frying pan
- Bowl and fork
- Wide spatula
- Cutting board and knife
📖 Steps
- Mix the flour and a pinch of salt in the mixing bowl. Add 1 tbsp oil, then pour in the lukewarm water little by little, mixing by hand, until you have a soft ball of dough that no longer sticks to your fingers. If it's sticky, add a pinch of flour.
- Knead for 5 min on a lightly floured work surface until the dough is smooth and elastic. Cut it in half, shape into two balls, cover with a tea towel and leave to rest for 15 min: once relaxed, the dough will roll out much more easily.
- Meanwhile, deseed the tomato and cut it into small dice, then very finely slice the cabbage and onion. Crack the eggs into the bowl, season with salt and pepper and beat with a fork, then add the vegetables and mix.
- Roll out each ball with a rolling pin into a thin disc about 22 cm across, flouring lightly so it doesn't stick. Heat the dry frying pan over a medium-high heat for 2 min.
- Cook one chapati for 1 min until bubbles appear, then flip it and cook for another 1 min. It should be soft and speckled golden brown, without becoming dry or brittle. Keep it under a tea towel and cook the second one the same way.
- Lower to a medium heat, pour half the remaining oil into the pan, then half the egg mixture, spreading it to the size of the chapati. Cook for 2 min without stirring, until the underside is set and the top almost cooked.
- Place a chapati directly on top of the omelette and press down with the spatula for 30 s so they stick together. Flip the whole thing over and cook for another 1 min on the chapati side to warm it through. Repeat with the rest of the oil, the rest of the eggs and the second chapati.
- Slide each rolex onto the chopping board, omelette side up, and roll it up tightly. Cut in half on the diagonal and wrap in foil or baking paper to take with you and eat while still warm.
💡 FitBot tip: Make the chapatis the day before and keep them wrapped in a tea towel: in the morning, all that's left is to cook the omelette. For more protein, add 1 egg white per rolex.
