📝 Ingredients

  • 4 large apples (about 800 g)
  • 40 g walnut halves
  • 40 g raisins
  • 2 tbsp honey (40 g)
  • 1 tsp ground cinnamon
  • 15 g unsalted butter
  • 100 ml water
  • 200 g fromage frais

🍴 Utensils

  • Ovenproof dish
  • Apple corer
  • Paring knife
  • Bowl
  • Teaspoon

📖 Steps

  1. Preheat the oven to 180 °C. Wash and dry the apples. Remove the core with the apple corer, stopping 1 cm from the bottom, then widen the hole with the teaspoon to 2 to 3 cm across, without piercing the base: the filling and juices need to stay inside the fruit.
  2. With the tip of the knife, score the skin all the way round each apple, halfway up, 2 mm deep: this little cut stops the skin from bursting during baking.
  3. Roughly chop the walnuts. In the bowl, mix them with the raisins, cinnamon and 1 tbsp honey until you have a nice sticky filling.
  4. Place the apples in the dish and fill each hole with the filling, packing it down with the spoon. Put a small knob of butter on each apple, then drizzle with the rest of the honey.
  5. Pour the water into the bottom of the dish: it stops the juices from burning and turns into a syrup. Bake for 35 min at 180 °C, basting the apples with their juices halfway through using the spoon.
  6. Check they're done: the tip of a knife should slide in without resistance and the skin should be wrinkled. Leave to cool slightly for 5 min, then serve each apple with a spoonful of fromage frais and a little syrup from the dish.
💡 FitBot tip: Choose apples that hold their shape when cooked, such as Boskoop, King of the Pippins or Reinette du Canada. Leftovers keep for 2 days in the fridge and are lovely cold for breakfast with fromage frais.
