📝 Ingredients

  • 4 slices stale wholemeal bread (160 g in total)
  • 3 eggs
  • 100 ml semi-skimmed milk
  • 20 g vanilla protein powder (whey)
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 pinch of salt
  • 10 g butter
  • 200 g frozen mixed berries
  • 150 g plain skyr
  • 2 tsp maple syrup

🍴 Utensils

  • Large non-stick frying pan
  • Deep dish (such as a gratin dish)
  • Whisk
  • Small saucepan
  • Spatula
  • Plate

📖 Steps

  1. In the dish, first whisk the milk with the protein powder until fully dissolved, then add the eggs, cinnamon, vanilla and salt. Whisk until smooth, with no streaks of egg white.
  2. Put the berries in the small saucepan with 1 tsp maple syrup. Warm over a low heat for 5 to 6 minutes, stirring occasionally, until thawed and a red syrup forms.
  3. Dip the bread slices in the mixture, 20 to 30 seconds per side for very stale bread, just 10 seconds for fresher bread. They should be soaked right through without falling apart.
  4. Melt half the butter in the pan over a medium heat. When it foams, before it browns, add 2 slices and cook for 2 to 3 minutes per side, until golden brown and the centre feels firm to the touch.
  5. Keep the heat at medium: too high and the outside burns before the egg is cooked through. Set the first slices aside on the plate, add the rest of the butter and cook the last 2 the same way.
  6. Divide the French toast between two plates, add a generous spoonful of skyr on the side, top with the warm berries and their juice, then drizzle with the rest of the maple syrup. Serve straight away, while the bread is crisp.
💡 FitBot tip: Bread that's 2 or 3 days old is ideal: it soaks up the mixture without collapsing. For even more protein, stir an extra 20 g whey into the skyr.
