📝 Ingredients
- 150 g long-grain rice
- 6 eggs
- 1 carrot (about 100 g)
- 1 brown onion
- 100 g frozen peas
- 6 tbsp ketchup (4 for the rice, 2 for decorating)
- 1 tbsp soy sauce
- 2 tbsp semi-skimmed milk
- 1 tbsp sunflower oil
- 10 g unsalted butter (5 g per omelette)
- Salt, black pepper
🍴 Utensils
- Saucepan
- Colander
- 20 to 24 cm non-stick frying pan
- Flexible spatula
- 2 bowls
📖 Steps
- Rinse the rice until the water runs almost clear, then cook it in a pan of boiling salted water for 10 to 12 min, according to the packet. Drain and spread it out on a plate to dry a little: rice that's too wet sticks when fried.
- Meanwhile, peel the carrot and cut it into small 5 mm dice, then finely chop the onion. Cut small, the vegetables cook quickly and spread evenly through the rice.
- Heat the oil in the frying pan over a medium heat. Fry the onion and carrot for 5 min, stirring, until the onion is translucent and the carrot tender. Add the peas, still frozen, and cook for 2 min.
- Add the rice, 4 tbsp ketchup and the soy sauce, then stir-fry for 3 min over a medium-high heat, mixing well, until every grain is coated and pink. Season with pepper, then use the spatula to shape half the rice into a domed oval on each plate.
- Wipe out the frying pan with kitchen paper. In each bowl, beat 3 eggs with 1 tbsp milk and a pinch of salt, just enough to combine the yolks and whites, without making them frothy.
- Melt 5 g butter in the frying pan over a medium heat. When it foams, pour in one bowl of beaten eggs and stir briskly in circles with the spatula for 20 to 30 s, as for scrambled eggs, until the bottom starts to set.
- Stop stirring, smooth the surface and cook for another 20 s: the underside should be set but the top still runny. Slide the omelette onto the rice, helping it along with the spatula, so it covers it like a blanket.
- Repeat with the remaining butter and eggs for the second plate. Decorate each omurice with a drizzle of ketchup (1 tbsp per plate) and serve straight away, while the omelette is still soft.
💡 FitBot tip: Leftover rice from the day before (about 400 g cooked rice) is ideal: it fries better and saves you 15 min. For a higher-protein version, add 150 g diced chicken, fried with the vegetables.
