📝 Ingredients
- 100 g dark chocolate 70%
- 3 eggs (whites and yolks separated)
- 1 tbsp sugar
- 1 pinch of salt
- 1 tsp vanilla extract
- Optional: 1 tbsp strong coffee (boosts the chocolate without tasting of coffee)
- Fleur de sel, orange zest to serve

📖 Steps
- Melt the chocolate in a bain-marie, stirring. Remove from the heat and let cool for 3–4 min. Add the yolks one at a time, whisking. Add the vanilla and coffee if using.
- Whisk the egg whites to stiff peaks with the pinch of salt. Once they form peaks, add the sugar and beat for another 30 sec.
- Stir 1/3 of the whipped whites into the chocolate, mixing vigorously — this step “loosens” the chocolate mixture.
- Fold in the rest of the whites in 2 batches with a spatula, using circular movements from the bottom up. Stop as soon as no white streaks are visible — don't overmix.
- Pour into the glasses or ramekins. Refrigerate for at least 2 hours (4 hours = ideal).
- Serve with a pinch of fleur de sel and orange zest if you like.
💡 FitBot tip: The key: the chocolate mustn't be too hot when you add the yolks (it would cook them) or too cold (it would set). 35–40°C is the ideal temperature — lukewarm to the touch.
