📝 Ingredients

  • 3 egg whites (about 100 g)
  • 1 pinch of salt
  • 150 g caster sugar
  • 1 tsp cornflour + 1 tsp white vinegar
  • 450 g plain skyr
  • 2 tbsp honey + 1 tsp vanilla extract
  • 250 g fresh red berries
  • 6 fresh mint leaves

🍴 Utensils

  • Electric hand mixer
  • Large mixing bowl
  • Flexible spatula
  • Baking tray
  • Baking paper
  • Airtight container

📖 Steps

  1. Preheat the oven to 100 °C, preferably conventional (no fan). Draw 6 circles 8 cm in diameter in pencil on a sheet of baking paper, then turn it over onto the baking tray, pencil side down: they will act as a guide.
  2. Carefully separate the whites from the yolks: the slightest trace of yolk will stop the whites from whipping. Pour the whites into a large, perfectly clean and dry bowl, add the pinch of salt and whisk with an electric mixer on medium speed until they form soft peaks.
  3. Add the sugar a spoonful at a time while whisking on full speed, waiting 15 seconds between each addition. Keep going for 3 to 4 min after the last addition: the meringue should be thick, glossy and form a stiff peak on the end of the whisk.
  4. Rub a little meringue between two fingers: if it still feels grainy, whisk for another 1 to 2 min. Then add the cornflour and vinegar and fold in gently with a spatula, just until combined.
  5. Spoon the meringue onto the 6 circles, then hollow out the centre with the back of the spoon to form nests with slightly raised edges. Bake for 1 h 30 min without ever opening the oven door.
  6. Turn off the oven and leave the meringues to dry inside with the door closed for at least 1 h (or overnight). They should come away from the paper easily and sound hollow when tapped. Then store them in an airtight container, away from moisture.
  7. Make the cream: mix the skyr with the honey and vanilla extract until smooth. Gently rinse the berries, pat them dry on kitchen paper and cut the largest strawberries in half or into quarters.
  8. Fill at the last minute, as the meringue softens within 15 to 20 min in contact with the skyr: spoon 2 generous spoonfuls of vanilla skyr into each nest, add the berries and decorate with a mint leaf. Serve immediately.
💡 FitBot tip: Save the 3 yolks for a crème caramel or a carbonara. Plain meringues keep for 1 week in an airtight container, so you can bake a double batch in advance.
