📝 Ingredients

  • 4 kiwis (about 90 g each)
  • 60 g dark chocolate, 70% cocoa
  • 1 tsp coconut oil
  • 15 g unsalted roasted peanuts
  • 10 g desiccated coconut
  • 1 lime (for the zest)
  • 1 pinch fleur de sel

🍴 Utensils

  • Paring knife
  • Wooden lolly sticks
  • Baking tray or large plate
  • Baking paper
  • Small microwave-safe bowl

📖 Steps

  1. Peel the kiwis with a paring knife, removing as little flesh as possible. Trim the ends, then cut each kiwi into 3 thick slices of about 1.5 cm, making 12 slices: any thinner and they would break on the stick.
  2. Pat the slices dry on both sides with kitchen paper: chocolate won't stick to damp fruit. Push a stick 2 to 3 cm into the edge of each one and place them on a tray lined with baking paper.
  3. Freeze for 1 hour, until the slices are hard. Meanwhile, finely chop the peanuts with a knife and mix them on a plate with the coconut and the grated lime zest.
  4. Break the chocolate into pieces in a small bowl with the coconut oil. Melt in the microwave in 20 s bursts on medium power, stirring between each, until smooth. Leave to cool for 3 min: if it's too hot, it will slide off the fruit.
  5. Take the kiwis out of the freezer. Dip each slice halfway into the chocolate, tilting the bowl, or coat it with a spoon, let it drip for 2 s, then immediately press it into the coconut-peanut mixture: the chocolate sets quickly on contact with the frozen fruit.
  6. Lay the sticks back on the baking paper, sprinkle with a pinch of fleur de sel and return to the freezer for at least 30 min. Take the kiwis out 5 min before eating so they aren't too hard to bite into.
💡 FitBot tip: They keep for 1 month in the freezer in an airtight container, separated with baking paper. The same method works with banana slices or whole strawberries.
