📝 Ingredients

  • 130 g plain flour (+ 1 tbsp for the work surface)
  • 1 tsp baking powder
  • 90 g plain yoghurt
  • 1 tsp olive oil
  • 100 g mozzarella (about ¾ of a ball)
  • 40 g feta
  • 2 eggs
  • 10 g fresh chives
  • Salt, black pepper

🍴 Utensils

  • Mixing bowl
  • Bowl
  • Rolling pin
  • Baking tray
  • Baking paper
  • 2 small cups

📖 Steps

  1. Preheat the oven to 230 °C and line a baking tray with baking paper. In a mixing bowl, mix the flour, baking powder and 1 pinch of salt, then add the yoghurt and olive oil: it's a quick pizza dough with no rising time.
  2. Mix with a fork, then knead by hand for 2 min until you have a smooth, soft ball that's no longer sticky. If it cracks, knead with slightly wet hands; if it sticks, add a little flour. Leave to rest for 10 min under a tea towel.
  3. Meanwhile, separate the eggs, keeping each yolk whole in a small cup. Crumble the feta into a bowl, add the well-drained mozzarella cut into small dice, the 2 egg whites and some pepper, then mix.
  4. Cut the dough in 2. On the floured work surface, roll each piece into an oval about 25 × 15 cm and 4 mm thick. Roll the two long sides inwards by 2 cm, then pinch and twist the ends firmly to form a boat.
  5. Place the boats on the tray and gently stretch the middle to widen it. Spread the cheese filling in the centre, pressing it down, without spilling over the rolled edges, which should stay clearly visible so they puff up and brown.
  6. Bake for 12 to 14 min, until the dough is golden and the cheese melted and bubbling. Take out the tray, make a small well in the centre of each boat with the back of a spoon and gently slide in an egg yolk.
  7. Return to the oven for just 1 to 2 min, just long enough for the yolk to warm through while staying runny. Any longer and it sets and won't mix into the cheese: better to take it out a little too early than too late.
  8. Sprinkle with snipped chives and serve straight away. At the table, stir the yolk into the melted cheese with a fork, then tear off the crispy edges to dip into this creamy mixture.
💡 FitBot tip: To save time in the morning, make the cheese filling (without the eggs) the night before and keep it in the fridge. For more protein, add a third egg white to the filling.
