📝 Ingredients

  • 3 tins white beans (795 g drained)
  • 1 tin of chopped tomatoes (400 g)
  • 2 brown onions (about 100 g each)
  • 3 garlic cloves
  • 1 tbsp tomato paste
  • 1 tsp dried oregano + 15 g fresh dill
  • 150 ml water
  • 3 tbsp olive oil
  • 150 g feta
  • 4 eggs
  • 4 slices country-style bread (about 50 g each)
  • Salt, black pepper

🍴 Utensils

  • Sauté pan or casserole dish
  • Baking dish
  • Saucepan
  • Colander
  • Chopping board
  • Knife

📖 Steps

  1. Preheat the oven to 200 °C. Peel and thinly slice the onions; peel and chop the garlic. Rinse the white beans under cold water in a colander and drain well. Finely chop the dill, discarding the tough stalks.
  2. In a sauté pan, heat 2 tbsp oil over medium heat. Soften the onions for 6 to 7 minutes, stirring, until tender and golden, then add the garlic and tomato purée and cook for 1 minute, stirring.
  3. Pour in the chopped tomatoes and the water, add the oregano and half the dill, and season with salt and pepper. Simmer for 5 minutes over medium heat, then gently fold in the beans with a spoon so as not to crush them.
  4. Transfer everything to the baking dish (or keep the sauté pan if it's ovenproof). Crumble the feta over the top, drizzle with the remaining oil and bake for 25 minutes, until the sauce is bubbling at the edges and the feta is golden in places.
  5. While it bakes, bring a saucepan of water to a boil. Gently lower in the eggs straight from the fridge using a spoon and cook them at a gentle boil for exactly 6 minutes 30 seconds, for set whites and runny yolks.
  6. Immediately plunge the eggs into a bowl of very cold water for 2 minutes to stop the cooking. Peel them carefully by tapping the shell all over, then removing it under a trickle of cold water.
  7. Toast the bread slices in the toaster, or for 3 minutes under the oven grill at the end of cooking, until golden and crisp.
  8. Take the dish out of the oven, sprinkle with the remaining dill and leave to rest for 5 minutes. Serve in shallow bowls, with a halved soft-boiled egg on top of the beans and a slice of toast for mopping up the sauce.
💡 FitBot tip: The dish keeps for 3 days in the fridge and reheats very well: just cook the eggs fresh. No fresh dill? 1 tsp dried dill added to the sauce does the job.
