📝 Ingredients
- 80 g rolled oats
- 150 g fromage frais
- 2 eggs
- 30 g vanilla whey protein
- 60 ml semi-skimmed milk
- 1 tsp baking powder
- 1 pinch of salt
- 1 tsp rapeseed oil
- 150 g frozen mixed berries
- 2 tbsp maple syrup
🍴 Utensils
- Blender
- Electric waffle iron
- Ladle
- Pastry brush
- Wooden spatula
- Wire rack
📖 Steps
- Take the berries out of the freezer and leave them to thaw in a bowl (or 1 minute in the microwave). Blend the oats for 30 seconds into a fine flour: the finer it is, the softer the waffles will be.
- Add the fromage frais, eggs, whey, milk, baking powder and salt to the blender. Blend for 20 to 30 seconds until you have a smooth, thick batter that coats the back of a spoon.
- Leave the batter to rest for 5 minutes: the oats absorb the liquid and the batter thickens slightly. Meanwhile, preheat the waffle iron on its highest setting for at least 5 minutes; it needs to be really hot.
- Lightly oil the waffle iron plates with a brush dipped in the oil, not forgetting the corners: with whey in it, the batter is more prone to sticking than a classic batter.
- Pour a ladleful of batter into the centre of the bottom plate, quickly spread it towards the edges with the back of the ladle, stopping 1 cm from the edge, then close the waffle iron.
- Cook for 4 to 5 minutes without opening, until almost no more steam escapes and the waffles are nicely golden. Loosen them with a wooden spatula and place them on a wire rack so they stay crisp.
- Repeat with the rest of the batter, oiling the plates again if the waffles stick. You'll get about 4 waffles, depending on the size of your waffle iron.
- Serve 2 waffles per person, topped with the berries and their juice and drizzled with a spoonful of maple syrup. Enjoy while hot and crisp.
💡 FitBot tip: Once cooled, the waffles freeze very well: pop them in the toaster and they'll be crisp again. No waffle iron? Cook the same batter as pancakes in a frying pan.
