📝 Ingredients
- 320 g dried fettuccine
- 4 chicken breasts (about 125 g each)
- 400 g broccoli (about 1 head)
- 3 garlic cloves
- 15 g unsalted butter
- 400 ml semi-skimmed milk
- 100 ml reduced-fat single cream, 15 % fat
- 2 tbsp cornflour (16 g)
- 60 g Parmesan
- 1 tbsp olive oil
- 1 pinch of nutmeg
- 2 tbsp chopped fresh parsley
- Salt, black pepper
🍴 Utensils
- Large saucepan
- Steamer basket
- Large sauté pan
- Whisk
- Colander
- Cutting board and knife
📖 Steps
- Bring a large pan of salted water to the boil. Meanwhile, cut the broccoli into small florets, peel and finely chop the garlic, and finely grate the Parmesan.
- If the chicken breasts are thick, slice them in half horizontally so they cook evenly. Season with salt and pepper on both sides.
- Heat the oil in a large sauté pan over a medium-high heat. Sear the chicken breasts for 4 min without moving them, then turn and cook for a further 3 to 4 min over a medium heat, until nicely golden and no longer pink in the centre. Set aside on a board, covered with foil.
- Cook the fettuccine in the boiling water according to the packet instructions. Set the steamer basket filled with the broccoli over the pan, cover and cook for 6 to 7 min, until tender and bright green. Scoop out a cup of cooking water (about 150 ml) before draining the pasta.
- While the pasta cooks, whisk the cornflour into the cold milk in a bowl until there are no lumps. In the chicken pan, over a low heat, melt the butter and gently fry the garlic for 1 min without letting it colour.
- Pour the cornflour milk and the cream into the pan and heat over a medium heat, whisking constantly. Once it starts to simmer, allow 2 to 3 min: the sauce should thicken and coat the back of a spoon.
- Remove from the heat and add the Parmesan in two batches, stirring until melted, then the nutmeg and some pepper. Taste before adding salt. Don't let the sauce boil again, or the cheese will turn stringy and grainy.
- Add the drained pasta to the sauce and toss for 1 min, adding a little cooking water if it's too thick. Slice the chicken, lay it on the pasta with the broccoli and sprinkle with parsley.
💡 FitBot tip: To save time, use leftover roast chicken. The sauce thickens as it cools: when reheating, loosen it with a splash of milk.
