📝 Ingredients
- 150 g minced beef
- 1 can kidney beans (400 g)
- 1 can of crushed tomatoes (400 g)
- 1 onion, 2 garlic cloves
- 1 red bell pepper, diced
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp chili powder (or more to taste)
- ½ tsp ground coriander
- 1 tsp tomato paste
- 1 square of 70% dark chocolate (the secret!)
- 80 g rice or cornbread, to serve
- Sour cream, grated cheddar, coriander

- Dutch oven or heavy-bottomed saucepan
- Wooden spoon
📖 Steps
- Sauté the onion and pepper in the oil for 5 min. Add the garlic and spices and cook for 1 min.
- Add the minced beef and brown it, breaking it up. Drain off any excess fat.
- Add the tomato paste, chopped tomatoes and rinsed kidney beans. Season with salt.
- Bring to the boil, then reduce to very low heat. Cover and simmer for at least 30 min, stirring occasionally.
- At the end of cooking, add the square of dark chocolate — it adds depth and roundness without tasting of chocolate. It's the secret of Texan chilis.
- Taste and adjust the spices and salt. If too thick, add a little water.
- Serve over rice with sour cream, grated cheddar and fresh coriander.
💡 FitBot tip: Chili freezes really well. Make a big batch and freeze it in individual portions. Reheated the next day with toasted cornbread, it's even better.
