📝 Ingredients

  • 300 g lean minced beef, 5% fat (2 patties of 150 g)
  • 500 g potatoes
  • 1 tbsp olive oil (2 tsp for the potatoes, 1 tsp for the pan)
  • 1 tsp sweet paprika
  • 1 romaine lettuce heart (about 150 g)
  • 2 tomatoes (about 250 g)
  • ½ red onion (about 50 g)
  • 6 gherkins (4 for the bowl, 2 for the sauce)
  • 100 g 0 % fat plain skyr
  • 1 tbsp ketchup + 1 tsp Dijon mustard
  • Salt, black pepper

🍴 Utensils

  • Baking tray + baking paper
  • Frying pan
  • Bowl
  • Chopping board
  • Knife
  • Spatula

📖 Steps

  1. Preheat the oven to 220 °C. Wash the potatoes without peeling them, cut into 2 cm cubes and dry them in a clean tea towel: when they're really dry, they get much crispier in the oven.
  2. On a baking tray lined with baking paper, toss the cubes with 2 tsp oil, the paprika and a pinch of salt. Spread them out in a single layer without crowding. Roast for 30 to 35 min, turning halfway through, until golden and crispy.
  3. Make the burger sauce: finely chop 2 gherkins and mix them with the skyr, ketchup and mustard. Season with pepper, taste and keep in the fridge until serving.
  4. Wash the romaine and cut it into strips, dice the tomatoes and slice the red onion into thin rings. Soak the onion in a bowl of cold water for 5 min to mellow its flavour, then drain. Slice the remaining 4 gherkins into rounds.
  5. Shape 2 patties of 150 g, 1.5 cm thick, without packing the meat too tightly, then make a slight dip in the centre with your thumb: they'll stay flat as they cook. Season with salt and pepper just before cooking.
  6. Heat the remaining teaspoon of oil in a frying pan over high heat. Sear the patties for 3 min without touching them, flip and cook for 3 min more for medium (4 min per side for well done). Don't press them down with the spatula: the juices would run out.
  7. Let the patties rest for 2 min. Assemble the bowls: romaine at the bottom, then roast potatoes, tomatoes, red onion and gherkins. Add the patty, whole or sliced into strips, and spoon over the burger sauce. Serve straight away, while the potatoes are hot.
💡 FitBot tip: For a more indulgent version, melt a slice of cheddar on each patty during the last minute, with the lid on. The sauce keeps for 2 days in the fridge: make double for your next bowls.
