📝 Ingredients
- 150 g wholemeal flour
- 35 g brown sugar (30 for the dough, 5 for sprinkling)
- 1 ½ tsp ground cinnamon (1 for the dough, ½ for sprinkling)
- ½ tsp baking powder
- 1 pinch of salt
- 40 g softened unsalted butter
- 40 g honey (about 2 tbsp)
- 2 tbsp semi-skimmed milk (30 ml)
🍴 Utensils
- Mixing bowl
- Rolling pin
- Baking paper
- Baking sheet
- Knife
- Fork
📖 Steps
- In a bowl, mix the wholemeal flour, 30 g brown sugar, 1 tsp cinnamon, the baking powder and the salt. Add the softened butter cut into small pieces and rub it into the flour with your fingertips until it looks like coarse sand with no visible lumps of butter.
- Add the honey and milk, then mix with a fork and finish by hand until the dough comes together into a soft ball, without overworking it. It's a little sticky because of the honey, which is normal: flatten it into a disc, wrap it in cling film and chill for 20 minutes.
- Preheat the oven to 170 °C. Place the cold dough between two sheets of baking paper and roll it out into a rectangle of about 24 × 30 cm and 3 mm thick: the thinner and more even it is, the crunchier the biscuits will be.
- Remove the top sheet and slide the bottom one, with the dough, onto the baking tray. With a knife, cut 16 rectangles of about 6 × 7.5 cm without separating them: just score the lines firmly right down to the paper.
- Prick each rectangle 5 or 6 times with the tines of a fork, to stop the dough puffing up and for the classic pattern. Mix the remaining 5 g brown sugar with ½ tsp cinnamon and sprinkle it over all the dough.
- Bake for 12 to 15 minutes, until the biscuits are firm to the touch and nicely amber at the edges. Keep an eye on them in the last few minutes: wholemeal flour and honey colour quickly and turn bitter if they get too brown.
- As soon as they come out of the oven, run the knife along the lines again to separate the biscuits while they are still soft. Leave them to cool completely on the oven rack: they harden and become crunchy as they cool.
💡 FitBot tip: They keep for a week in a tightly closed tin. Crumbled, they also make an excellent cheesecake base instead of shop-bought biscuits.
