📝 Ingredients

  • 400 ml semi-skimmed milk
  • 40 g honey (30 g for the milk, 10 g for the skyr)
  • 200 g frozen mixed berries
  • 1 tbsp caster sugar (12 g)
  • 1 tsp lemon juice
  • 150 g plain skyr, 0 % fat
  • ½ tsp vanilla extract
  • 15 g flaked almonds

🍴 Utensils

  • 20 × 25 cm baking dish
  • Small saucepan
  • Frying pan
  • Whisk
  • Fork
  • Dessert bowls

📖 Steps

  1. Warm 100 ml of the milk in a small saucepan over a low heat for 1 min, then whisk in 30 g of honey until dissolved. Add the rest of the cold milk and mix well: the honey must be completely dissolved, otherwise it sinks to the bottom as it freezes.
  2. Pour the milk into the baking dish in a thin layer about 1 cm deep. Cover and place perfectly flat in the freezer for at least 4 hours, until the milk is completely frozen. The thinner the layer, the lighter the snow will be.
  3. Meanwhile, rinse the saucepan and add the still-frozen berries, the sugar and the lemon juice. Cook over a medium heat for 6 to 8 min, stirring, until the fruit has broken down and the juice is slightly syrupy.
  4. Leave the compote to cool, then put it in the fridge: it must be well chilled when served so it doesn't melt the milk snow. It thickens further as it cools.
  5. Mix the skyr with 10 g of honey and the vanilla extract until smooth. Toast the flaked almonds in a dry frying pan over a medium heat for 2 to 3 min, stirring constantly, then tip them onto a plate to stop them cooking.
  6. Put the two bowls in the freezer 10 min before serving. Then take out the dish of frozen milk and wait 3 to 5 min, just long enough for the surface to soften slightly so it can be scraped.
  7. Scrape the frozen milk vigorously with the tines of a fork, always in the same direction, until you have fine, light snow. Work quickly and return the dish to the freezer for a few minutes if the snow starts to melt.
  8. Pile the snow into a dome in the chilled bowls, spoon over the berry compote, top with a spoonful of vanilla skyr and scatter with the toasted almonds. Serve immediately, before the snow melts.
💡 FitBot tip: For even finer snow, freeze the milk in an ice cube tray and blitz the cubes for a few seconds in a blender. The compote keeps for 4 days in the fridge and is lovely on yoghurt.
