📝 Ingredients
- 3 very ripe bananas (black ones are best)
- 2 eggs
- 100 g fromage blanc or skyr
- 80 g oat flour (blitzed oats)
- 40 g wholemeal flour
- 1 scoop vanilla protein (30 g) or replace with 30 g flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 tbsp peanut or almond butter
- 30 g chocolate chips
- 1 pinch of salt

📖 Steps
- Preheat the oven to 175 °C. Line the tin with baking paper.
- Mash the bananas with a fork into a coarse purée — a few chunks = more texture.
- Add the eggs and fromage blanc, mix.
- Stir in the peanut butter, then the dry ingredients: flours, protein, baking powder, cinnamon and salt. Mix just enough to combine.
- Fold in the chocolate chips (keep a few to decorate the top).
- Pour into the tin. Scatter the remaining chips on top.
- Bake for 45–50 min. Test with a knife — it should come out clean. Let cool completely before slicing (it sinks if cut while hot).
💡 FitBot tip: Soft, black bananas are essential — they bring natural sweetness and moistness. A yellow or green banana will give a bland, barely sweet result. Put overly green bananas in rice for 48h to speed up ripening.
